Quite a lot of work goes into the production of tequila: firstly, the ‘heart’ of the blue agave plant is cut out during harvesting (quite labour intensive), then fermentation takes place, before the liquid is distilled (often twice) in a pot-still. After that, tequila is either bottled or aged in barrels or casks depending on the desired flavour profile. So… don’t just knock back your tequila in a single shot!
