Single Pot Still
This whiskey differs from single malt in that the mash consists of both malted and unmalted barley. As a result, what many describe as the ‘pot still’ character – the cinnamon spice and flavours of richer fruit like pineapple and mango – comes in fact from the ingredients and not the vessel. Great examples of Irish single pot still whiskey include Redbreast, Green Spot and Powers.
